Slow Cooker Steak Fajitas

New Cookbook = New Recipe

Recipe:
1 pound beef flank steak, cut across the grain into thin strips
1 medium onion, cut into strips
1/2 cup medium salsa
2 tablespoons fresh lime juice
2 tablespoons fresh cilantro, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 small green bell pepper, cut into think strips
1 small red bell pepper, cut into thin strips
flour tortillas, warmed

Combine all ingredients except bell peppers and tortillas in slow cooker.  Cover; cook on low 5 to 6 hours.


Add bell peppers.   Cover; cook on low 1 additional hour.

Optional Toppings: shredded cheese, additional salsa, and sour cream

Serve with flour tortillas and toppings as desired.


Verdict:
I definitely liked this recipe.  Very easy to put together.  Very tasty.  The meat was very tender after removing from slow cooker.  The flavors were well blended with just the right amount of spice.  (Which means of course, if you actually like really spicy food, you're going to want to use spicier salsa or increase the chili powder or cumin or have some hot sauce on the side.)

The peppers were softened but not mushy and the onions were so flavored after cooking in the seasonings all day that even an onion hater would have no idea they were there.

Served with some 100% whole grain tortillas this was a healthy, delicious, and satisfying meal.

And with that, I probably won't be posting new recipes for a few days.  Spending the weekend house hunting in Michigan!  Four months in Cinci, folks.  Four months.

But whose counting.
