(Huh. So I really thought I posted this. Like three days ago. Blonde moment.)
After a fabulous Christmas, New Year's, and birthday - I woke up on New Year's Day with a sore throat. And an intense need for comfort food. Soup. Lots of soup. And something without an intense preparation because along with the sore throat coming on the heels of several days of eating way too much junk food, came feelings of sluggishness and a strong desire for blankets and couch cushions...
Recipe: (from Slow Cooker 365)
1 pound lean ground meat (I used beef)
4 ounces sliced mushroom... :( except for us...
1 yellow onion, diced
4 cloves garlic, chopped
2 stalks celery, sliced
1 cup carrots, chopped
1 14.5-ounce can diced or stewed tomatoes
1 tablespoon dried oregano
4 cups beef broth
2/3 cup dried elbow pasta (although I used shells since that's what I had)
add salt and pepper to taste
Use a 6-quart slow cooker. Brown the ground meat, mushrooms, onions, and garlic on the stove top and drain the fat.
Add meat and remaining vegetables to the slow cooker.
Add the can of tomatoes, oregano, and beef broth. Stir well. Cover and cook on low for 8 hours.
30 minutes before serving, add the dried pasta. Flip to high and cook for additional 30 minutes.
Verdict:
Just what the doctor ordered! Warming and comforting. No physical healing properties. But many psychological benefits. :) Flavor was good, but we did both add some salt and pepper in our individual bowls. Vegetables were well-cooked without being mushy. Perfect with some crusty bread to soak up the broth. In my opinion, it tasted even better when we ate it the second time.
I know we've been experiencing a bit of a heat wave the last few days but keep this in mind for when winter inevitably returns!
Looks good, I wish Dad was more open minded about soup meals.
