I am and always have been a breakfast eater. Can't function without it. I also tend to eat the same thing pretty much every day: cereal with skim milk and a handful of whatever fruit I have on hand. Good but it's also good to have options.
I like the smoothie recipe that I've found and love that it's a great way to sneak in some a.m. vegetables. But it's time consuming to put together, clean, and put away the blender, and I don't love cold smoothies for breakfast if there is still a morning chill in the air.
I'll sometimes make eggs but again, that can be time consuming.
Instant oatmeal is good with some berries added to it, but I also tend to be hungry again like 5 minutes after I finish. Not so good.
Then I ran across this recipe on Pinterest, and it sounded too good to pass up.
Recipe:
1/4 cup oats (I used instant oats)
1 egg
1 teaspoon brown sugar
handful of blueberries
splash of milk (I used skim)
dash of cinnamon
Combine all ingredients in a microwave safe mug (I made mine in a bowl rather than a mug, so it's a little flatter).
Microwave 1:30-2 minutes.
Flip over on plate and enjoy!
Verdict:
Keeper! Super quick. Super tasty. Super flexible. Super filling. It's kind of like making your own Blueberries and Cream instant oatmeal packet except with way less sugar and other artificial 'stuff' that isn't good for you. It's just as simple as opening that packet, too.
Just a slight hint of sweetness; although, next time I'll try it without the brown sugar. I think the berries would be sweet enough for me.
It's flexible in that, while the recipe calls for blueberries, I'm sure strawberries, blackberries, peaches or bananas would work equally well. You could probably even add frozen fruit, which can be more cost-effective than always having fresh berries on hand.
And with the addition of the egg, there was enough protein in it that I was full for several hours even after going through an intense Jillian workout - had I just had oatmeal I probably would have been starving by the middle of the workout video.
Now that looks interesting. Love the addition of the protein. Will have to give this a try.
