It has been awhile since I've had a new recipe to post. I know excuses are lame, but it has been Crazytown around here lately!
Not only did we have a marathon weekend of house hunting.... and are awaiting word on an actual offer on an actual house...
But I had to work.three.whole.days.
I know. Rough life. Sorry.
Turns out, when you work in a leasing office, and someone asks you to cover for them the first week of the month, you should say NO. It approaches the insanity that is report cards and parent teacher conferences. And I don't get paid nearly as well for it. And some adults ask even stupider questions than my students did.
"I'm here to pay my rent. Um, how much is it?" I am not the most budget-loving person in the world, but even I know that you need one, and to have one you kind of need to know the amount of, um, your biggest living expense. Sort of.
Random stranger walks in: "Did my sister come in today?" I could answer that if I knew who your sister was. Or who you are.
So anyway, after dealing with stupidity, insanity, and waiting all week long, I've needed simple and easy meals. Leftovers worked. Spaghetti worked. But none of it was creative, different, or fun... Until I remembered coming across this recipe weeks ago. And what's easier than a new crockpot recipe?
Recipe: (from Sweet Pea's Kitchen)
6 boneless, skinless chicken breasts
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
(OR - go the SUPER easy route and substitute 1 package of taco seasoning for all spices. I went with the spices.)
1 (16 ounce) jar salsa
flour tortillas (I used whole wheat)
(Plus I got some cheese and sour cream for garnish)
Throw everything (except tortillas) into crockpot and stir until chicken breasts are evenly covered in spices and salsa. Cook on low for 6 hours.
When cooking is completed, shred the chicken with two forks.
Heat tortillas according to package directions; top chicken with desired toppings. Enjoy!
Verdict:
Prep time is literally about 5 minutes. Less if you use the taco seasoning. And you have one dirty dish to clean up. Awesome.
It's a healthy, high protein, low calorie (minus the cheese and sour cream of course but it's optional).
Tender chicken perfectly flavored. Fun to put together. Delicious.
Oh, and did I say easy? Use this when you know you're going to have one of 'those' weeks!
