Grilled Green Beans

I figured that before July is actually over I should try and get in just one more post.  In case I haven't mentioned it, it's been a crazy month! 

Moving = chaos and that does not equal much time spent in the kitchen, let alone experimenting with new recipes.  This is another recipe courtesy of my parents' kitchen/grill/ability to grocery shop....

Thank goodness for real food!

Recipe:
green beans
olive oil
balsamic vinegar
salt
pepper
parmesan cheese

Very simple: drizzle green beans with olive oil; sprinkle with salt and pepper; add some balsamic and parmesan; place on grill.






So simple, yet so good.

I'm getting a bit spoiled with my vegetables these days.  I went out to a restaurant the other night and had green beans with my entree.  Boy were they disappointing.  You just can't compare with grilled or oven roasted veggies...

Moved In!

We are officially moved in to our new house!

Technically, we still have boxes (and boxes and boxes) in the basements of our parents...  And lots (and lots and lots) of work to do painting, fixing, and buying...

But it's a process, and as of Friday night, we were settled enough to sleep here and cook here.

Still not up to trying out a new recipe, but I revisited an old favorite for my first cooking foray in my new kitchen.  This recipe for chicken, kale, and chickpea skillet.

(Unfortunately, this is an old picture.  My camera is full of new pictures that I want to post here and on Facebook.  The problem is, I can't find where I packed the device that transfers pictures from camera to computer.  Sigh...  I hate moving.)

Let the Work Begin!

On the 4th of July we received the keys to our new house!  This was a bit earlier than we had thought we would get the keys, so we have a couple of weeks to clean, paint, and make a few changes before moving in our furniture.

Generally, the house is in pretty good shape.  There really isn't anything hideous or unlivable, just cosmetic changes and the chance to update and make the house 'our own.'

Of course of I have oodles of ideas!  Some are possible for the immediate future while others will require some patience..... and saving money....

We've already been to Lowe's and Home Depot more times in the last week than in my entire life!

Here are some Before Pics.  I'll post updates of individual projects as they are completed....

Laundry Room Goals: Clean, Paint, Remove hideous wire shelving, install new storage solution, change light fixture (actually, I need to eventually change most fixtures and hardware throughout the house as they are almost all gold - but one thing at a time)



Kitchen Goals: Structurally the kitchen is in good shape with clean, functioning appliances.  The hardware has already been changed from the original gold to a simple silver, which I can live with.  "Down the road' we will be changing the green laminate counter tops.  Green counter tops are definitely not my thing.  But that gets expensive, so there won't be any major kitchen changes for now.  The paint will also need to be redone 'at some point', but I'm not sure if I want to do it now, or just wait until we can do the counters and do everything at once...


Butler's Pantry Goals: Again, the counters will change when we change the kitchen counters.  This area is also screaming for some upper cabinetry, possibly with glass fronts.  Down the road.


Dining Room Goals: Too dark.  Must repaint.  I would also like to change the light fixture but will live with this until I can find (and afford) exactly what I want.  In my fantasies, I would also ditch the carpet and continue the hardwoods from the kitchen/hallway, but we'll see.....


Office Goals: This room is actually the most 'done.'  We purchased the furniture from the sellers and while I don't love the paint color, I don't hate it either.  We will probably leave it for now and just arrange furniture/decorate.

Powder Room Goals: I want to replace the gold fixtures, the mirror, and change the paint color.  This bathroom also  desperately needs some storage.


Living Room:  It does need to be repainted, but I think I need to wait until I've chosen new furniture and can hire a painter.  'Down the road' we will re-do the tiles around the fireplace.  They are green and one is already cracked.  The carpet will probably be replaced eventually but for now just cleaned.  And in my fantasies, new window treatments.  But I hear those are crazy expensive.

On to the upstairs...


Master Bathroom:  Hate, hate, hate this room! So sterile and white (except for the hideous countertop).  In the short term, I am hoping some paint, a new light fixture, and accessories will improve it a lot.  Long term, we will change the counter top and possibly the sinks.... The rest will depend on money, time, etc...  But PAINT will help dramatically for now!  This room is priority #1.


Master Bedroom:  Love the high ceilings in here.  We will be changing the paint for now, but that's probably about it.  I eventually want new bedroom furniture, but that won't happen for some time, so I don't want to go to crazy until then...  Oh, and of course the light fixture is, you guessed it, gold, so that will go eventually.  But for now I am just happy to have a ceiling fan again.


Guest Bathroom:  Again, so sterile and so white.  Paint will help big time, but that's probably it for now.  At least it is all in good condition.

We also have three spare bedrooms that will all need to be repainted and furnished eventually.

And a partially finished basement that we would love to update, change, improve....  But, you know, priorities.....

Obviously this is way more than we can accomplish in two weeks, so we'll see what actually happens...

Shrimp and Watermelon Salad

While sitting in the salon, waiting for my hair appointment last week (in other news, I finally have my hair back for the first time since moving to Cinci!), I came across a spread of new ways to use up watermelon.

I had in fact  purchased a watermelon for use in this fruit salad and had more than half of it left over.  It takes a looooooong time for two people to eat up fruit from simple snacking, so I thought this recipe would be a good way to use up a bit more.

Recipe: (from Better Homes and Gardens magazine)

(no amounts were given for ingredients, so I just guessed a mounts that looked good for a meal for two)
shrimp
watermelon
olive oil
chopped cucumber
feta or parmesan
oregano or basil
lemon juice

In  a large skillet, saute shrimp in olive oil 2-4 minutes, until no longer pink.

Transfer shrimp to a bowl.  In the same skillet, cook cubes of watermelon with a little water about 3 minutes, until the liquid reduces slightly.

Remove from heat and pour over shrimp.  Add chopped cucumber, cheese, and a handful of oregano and/or basil.  Drizzle with olive oil and a squeeze of lemon.


Mix well and serve.

Verdict:
All right.   A bit unusual.  Not bad...... Just not something I'd go out of my way to make again,  Alex's main complaint was that it was 'too light' for a meal.  He felt it needed some pasta or rice or something.  I thought it was a bit too liquidy....  And seemed to lack flavor.

In my opinion, the best part was the watermelon.  The idea of cooking watermelon seemed a bit odd at first, but the sweetness really did caramelize.  In the future, I think we will try grilling watermelon as a simple side dish on its own.




About mid-way through the meal, we lost power for the second time that day, and had to entertain ourselves playing with fire...

I mean dining by candlelight like the responsible adults that we are...  ;-)

More Patriotic Fruit!

I know the 4th of July is technically over, but just in case you have a festive celebration for the upcoming weekend, here's another patriotic presentation for you fruit.

(Due to the excitement of getting the KEYS to OUR NEW HOUSE - pics soon - some credit has to be given to my wonderful mom for getting this all together in a timely fashion!)

What You Need: (from Party City via Pinterest)

Skewers
a 9 x 13 (or other rectangleish - except I used a circle tray to leave extra room for the grapes) tray
blueberries
strawberries
bananas
(I also added grapes so there was a bit more fruit to choose from but not part of the original 'design')

I sort of figured out beforehand how many skewers I would need, how many blueberries there would be per skewer, how many strawberries, and how many blueberries, etc...  It's a loose formula.   I figured about 10 skewers total, 5 with blueberries on the first half for the 'stars', then the rest alternating strawberries and bananas for the 'stripes.'

You can prep the blueberries and strawberries ahead of time, but to prevent browning, the bananas really have to be sliced right before serving.  (If you want to avoid that hassle, marshmallows would make a good white alternative.)


Grapes were added to ours for a few more fruity options.  We love fruit!

When done, enjoy some fun and festive finger food!

Sometimes It's the Simple Things...

We missed a lot of favorite and familiar things when we were down in Cincinnati.  Family.  Friends.  Italian markets.  Speed limits over 60.  Snow.  People who know how to drive in snow.  People who know how to drive period.

But one thing I never thought would be so hard to find in Ohio: roadside fruit stands.

It's not like I grew up on a farm or anything.  But there was always access to fresh, local, seasonal fruits and veggies in the spring, summer, and fall.  Sure I thought that the selection in Ohio would be slightly different than what was available in Michigan.  But I never expected an absolute void of fruit and vegetable stands.

(At least in the Cincinnati area. I can't speak for elsewhere in Ohio.)

Over the weekend, it was amazing to do something as simple as pull over to a roadside fruit stand on impulse and choose some just-picked cherries.

Pure bliss.

And because I was with my husband, who can't ever buy just one thing, we also picked up some of this apple cinnamon-pancake mix.  Which, combined with some fresh apple chunks and pure Michigan maple syrup, made for a wonderful Saturday morning breakfast.



Chop apple.

Add egg and milk to batter.  Whisk well.

Add apple chunks.  Mix well.

Get griddle nice and hot.  Pour batter.


Flip!

Drizzle with pure Michigan maple syrup.

Dig in!

Ahhhhhhh.......

Patriotic Fruit Salad

If you're looking for a festive holiday treat that is simple, sweet, healthy, and still has some wow factor, this idea found on Pinterest will be sure to satisfy!

What You Need: (from witandwhistle via Pinterest)
watermelon
strawberries
blueberries

1 star shaped cookie cutter

Wash berries.  Lay out on towel to thoroughly dry.

Wash outside of watermelon.  Cut watermelon into slices.  In each slice, press in the cookie cutter so that you get a star-shaped piece of watermelon.

I was really only able to get one star per slice.  But I used the 'excess' watermelon as fruit for the salad and just layered the stars on top for a patriotic effect.  Because watermelon slices are so thick, I was able to slice each star in half.  But if you buy a whole watermelon, trust me, you'll have plenty of watermelon to go around.  I used less than half a watermelon to make this.



 Remove tops from strawberries; slice into halves or quarters.

Add strawberries and blueberries to watermelon in bowl.  Stir well to combine.



Layer watermelon star shapes on top.  Serve for some healthy patriotic flair at your next Independence Day event!


Verdict:
If you love fruit then you'll love this.  The process was no more difficult than it already is to slice a watermelon.  I'm no crafty-Cathy, so if I can get my stars to turn out right, anyone can.  And for such a simple dish, the reaction to its presentation is quite rewarding!  :)
